Japanese brewer, Domija, is to begin production of sake, the alcoholic drinking made by distilling rice beer, in Cambridgeshire. The company bought the Fordham Abbey 200-acre estate for £3.5m and will invest a further £8.9m on a new brewery and visitor centre, and plans to recruit 100 staff in the next 5 years.
Sake brewing is throught to date back 2,000 years and the company uses recipes more than 600 years old
