Sri Lankan-born executive chef Mario Perera is showcasing vibrant, colourful and spiced dishes from Sri Lanka at the new rooftop restaurant at The Dorchester, until 30th May 2021.
The latest gourmet culinary experience, ‘A taste of Sri Lanka’ is the third instalment of The Dorchester’s summer series.
Mario has combined his Sri Lankan heritage with 20+ years’ experience of culinary wizardry at The Dorchester, to create a sharing concept of vibrant, colourful and delicately spiced dishes from his homeland.
To accompany the menu, The Dorchester has created a list of signature cocktails. Designed to enhance the bold flavours and heady mix of spices for which Sri Lankan cuisine is renowned. The cocktails showcase tropical fruits, local Ceylon tea, Arrack (local coconut liquor), Colombo Gin and, of course, ginger and coconut flavours.
The event, supported by the Sri Lankan Trade Mission and Tourist Bureau, takes place on The Dorchester’spanoramic rooftop overlooking Hyde Park.
Chef Mario Perera was part of the culinary team at the Taj Samudra in Colombo before he moved to London in 1995 to take up the role of commis chef at The Dorchester. After 15 years at The Dorchester, he joined the Four Seasons Park Lane hotel as executive sous chef, before returning to The Dorchester in 2017.
