Chef Aktar Islam is to open his first solo restaurant, in Birmingham in May.
Islam, former chef-director of Birmigham-based Lasan group said his 70-cover restaurant “will take diners on an intoxicating culinary journey”, exploring the “diverse culinary heritage of Indian and the foundations of the grand cuisine,” in reference to food championed by chefs of historic empires as far back as the C13h, from the Mughals to the days of the British Raj.
Islam hope to emulate the dishes of chefs in the royal courts, at the forefront of gastronomy with influences from China, Persian, Arabia, Afghanistan, France, Portugal and Britain.
